VAL: Algerian Maakouda

I’m halfway through Algeria, and preparing multiple dishes is on the agenda now that I have all this time. (A maddening amount, while we iron out details and I continue to apply to opportunities).

Potato fritters seem to exist in some form or another from around the world. I tried this version though in honor of Algeria. As I said I’ll try another dinner plan in future but for that I’ll make the more standard couscous.

In the end the result could have used more salt (potatoes usually do) but they were still quite nice!

Ready to eat. For days to come, apparently.

I’ve not been super enthusiastic lately – many feelings being processed – but getting at least one dish made for Algeria before I virtually leave it again = small success.
