New year means new challenges!
The last few weeks of 2021, when I was between challenges, it felt weird to only be sending my distances to the VAL. So this is nice. Extra goals, extra ways to feel like I’m accomplishing something.
Of course I am still working the VAL, and I’m overdue to try a regionally-inspired dish. So maybe that will be tomorrow.
Will I also make a Chinese dish to go with the Great Wall challenge?
Maybe. Time will tell. And this should take me a fair amount of time.
