Great news! Another border crossed!
And extra bonus: lots of available recipes for me to try for Nigeria while I’m (virtually) there.
So first up: Party Jollof Rice!
Okay so: first off, Jollof Rice (Nigeria) and Jollof- Spiced Chicken (Ghana) don’t have much of a palate in common.
But they are both yummy. Yay!
Second: Wow, lots of blended veggies. Lots. Like I had to blend this in two batches.
Third: I did not have as much rice on hand as I thought. So this was a mix of rices when I was done.
But did I mention, yummy?
Jollof rice for the win!
