Crossing virtual borders again – this time to Ghana – means it’s time to break out the recipes again.
(Actually I couldn’t wait, and made this dish while I was still in Guinea. So I will definitely end up making another local dish also. Stay tuned.)
Anyway, since they have yet to steer me wrong, I tried this recipe for West African Peanut Stew with Chicken and Sweet Potatoes.

Not for nothing, but this is not listed as Chicken Stew. Rightly so. The house smells of peanuts and peanut butter as it cooks.
Normally in my house that would only happen if I were making peanut butter cookies and so I was a little iffy on this.
But you know I’m not about to give up on any part of this virtual travel/fitness challenge.
Lord, I miss traveling.
The end result is quite tasty, all in all. There is a bit of heat to it, and I had to remind myself that – oh yeah that’s right – it had a good amount of ginger and cayenne pepper in it. But it’s not overpowering. (Not that I’d probably mind.)
So I’ll call this dish a win!
