Between pedaling and walking, my daily distances are putting me ahead of the pace marker and into the next country: Sierra Leone.
So you know what that means: I have to go recipe hunting!
I found a groundnut stew (but the instructions leave out measurements for some ingredients which seems problematic) and a lot of what I’m finding is for cassava leaves (I can get cassava but not the leaves, here).
Or okra. I’m iffy on that but it is accessible. Or there are also some plantain recipes and something called banana akaras and ginger beer. So: some more searching about and I’ll give something a try.
