As I continue my virtual trek around the continent of Africa, I have enjoyed trying to bring it to life, a bit.
To that end I’ve been seeking out local recipes – or at least locally inspired recipes.
To that end I made this dish of West African shrimp.

I made basmati rice and added a hint of saffron for additional flavor. If I do it again I’d probably use jasmine rice instead, but it’s still good. I’d also never cooked with coconut milk before. I wasn’t sure what to expect.
Verdict: tasty. I’m glad I had fresh ginger on hand.
This will make a nice change from Irish stew for a bit.
