It was a good weekend to cook things. As evidenced by the fact that I did. (Also this was before Election Day so. Hence no comment on that for now.)
Things I Made
- Tzatziki
- Chicken souvlaki
- Beef stew
- Pizza
- Salads
- Bacon
- Potato casserole
That all effectively solved:
- The carrots in the fridge that I wanted to use up (stew)
- The potatoes I had on hand (stew, casserole)
- My continued craving for Greek food (tzatziti, souvlaki)
- The onions and peppers I had cut up (pizza)
- The bacon I had thawed (bacon, casserole)
- The extra shredded cheese on hand (casserole, pizza)
So my fridge is full… but full of easy and delicious ready-to-eat meals and sides. (Update from one week later: still working my way through. Glad it was all delicious… and varied,)
I’m calling that a win.

Tara’s going away this weekend for an out-of-state visit to family, which means I get to eat all the things she won’t. Chicken souvlaki might just make its way onto my menu!
